I called it chicken minestrone, as we all know minestrone and the typical Italian recipe people love this recipe. You can’t help but eat this recipe because you never get bored, it has a unique flavor.


1 1/2 pounds of chicken breast

2 large cloves of garlic

1/3 of a cup each, celery, carrots, onions, green pepper

4 cups of kale

1 small can (15.5 oz) of Canelli beans

1 small can (15.5 oz) of diced tomatoes

1 cup of Dateline pasta

1 qt of chicken stock (water if needed)

Spices: Thyme, garlic powder, parsley, 1 bay leaf. black pepper Optional grated cheese topping

Method of Preparation:

Coat the bottom of a large saucepan with olive oil, heat to med. season the raw chicken with pepper, thyme, garlic powder, cook on each side about 5-6 minutes per side, remove and allow to rest / cool.

Then chop with a fork. Meanwhile in a pan with oil and drippings, sauté until almost clear, carrots, celer, onions, peppers, garlic.

Add more oil if necessary.

Add the tomatoes and beans until bubbles form and the beans are completely cooked.

Throw in the parsley and bay leaf, the cabbage, and leave to wilt.

Add the chicken and broth and water if necessary and bring to a boil, reduce to a simmer over low heat.

Throw in the pasta and cook, stirring halfway for about 8/9 minutes.
